Simple Eats – Pineapple Tarts II 黄梨酥挞 II
Back-dating some posts as the first two days of CNY were busy days! I made a second batch of pineapple tarts on 1st Feb morning, using pineapple jam filling from Ailin Bakery House. I bought a new mould as well which is so much better than the one from Phoon Huat!!! yielded 140+ tarts this time. Not bad at all!
The sunflower motifs produced are so pretty and vivid!
Because they are more manageable, I was then able to roll the pastry and make the tart shell thinner and thus require less baking time, about 8 min should do the trick instead of the usual 10, first 4 mins empty without pineapple filling, and then another 4 mins with the pineapple filling on. The pineapple jam filling from Ailin Bakery House profess to use Sarawak Pineapples which have a delicious and natural sweetness amidst a slight hint of tartiness. I preferred this to what I got from Phoon Huat from the earlier batch. Ailin’s filling is also more moist and less sticky than Phoon Huat’s versions.
The final product before arranging them into an air-tight container and passing them to my neighbour. They also made pineapple tarts and gave just a small tub to try! Its the closed type which is equally yummy. So its only right that we present them something as a token of our appreciation. 🙂
Apart from pineapple tarts, I also managed to conjure about 100+ German Crunch Cookies to share with my neighbours and students as well. These are real easy and took very little effort to make.
