Weather has been really cranky of late and many around me seems to be down with something. I was suppose to show my “moral support” for a friend Catherine whose hubby and kiddos had fallen sick by cooking porridge for yesterday’s meals but as I was at a local supermarket getting some ”porridge supplies” like century egg, the uber fresh stingray steak at the seafood section was calling out at me!!! I knew I had to bring them home and seems like fate has it that I should have some bunga kantan and daun kesum bought just over the weekend, still hibernating in the fridge. Ikan Pari Asam Pedas it seems destined to be!

On the Trail of the Phoenix – Sotong Masak Hitam

Mention squid ink infused food and Mediterranean dishes like the Venetian Pasta al Nero di Seppia from Italy or the Catalan-Valencian Arròs negre from Spain immediate comes to mind for many of us. Lesser known to most is Sotong Masak Hitam, a classic dish from Malay cuisine which also celebrates the use of squid ink which lends the dish its dramatic appeal and subtle flavours of the sea. This dish is also a favorite amongst many Peranakans who spell it as “Sotong Masak Itam” instead, though like Rendang, remains a peripheral and never really properly assimilated into Baba-Nyonya cuisine proper. Not by definition of Straits Chinese cooking for most at least. It is nonetheless enjoyed by many, Malays, Peranakans and even Chinese alike, for its piquant flavours make this dish all the more moreish.

Đá Me Đậu Phộng – Vietnamese Iced Tamarind with Roasted Peanuts

Unlike Thai cuisine, I got to know Vietnamese food fairly late. I didn’t have my first pho or bahn mi until only a couple of years back. It may seem strange but Vietnamese cuisine to me is strangely familiar and yet very alien at the same time. I love the liberal use of greens and herbs in their soups and dishes, as well as the subtle spiciness in their food. A good bowl of pho bo makes a really satisfying lunch and me a very happy man. But that is only because I always make sure there is a glass of da me dau phong on standby at the side, and sometimes two! Dau me dau phong is Vietnamese for “Iced Tamarind and Roasted Peanuts”. It is so addictive and an absolute must order for me in a Vietnamese food joint. And it is so incredibly easy to make at home!

On the Trail of the Phoenix – Ikan Pari Kuah Lada

Ikan Pari Kuah Lada is a typical dish for everyday meals in a Peranakan household in Melaka and Singapore. It is essentially stingray cooked in a peppery sauce. The piquant flavours carried through the liberal use of white peppercorns and tamarind (asam jawa) makes the sauce (kuah) an excellent drizzling onto some piping hot steamed rice. Being spicy and tart at the same time makes it really moreish for more helpings of rice!

ส้มตำ Som Tam – Thai Green Papaya Salad

Thai cuisine is up next for Asian Food Fest #2 and the contrast between Thai and Japanese food couldn’t be greater. Yet I love them both! For me, Thai food is all about the explosion of flavours albeit with little mouthfuls that go a long way. The prototypical impression many of us have on Thai food is its stong notes on heat and sourish palate profile. Thai cuisine liberally incorporates chili in many of its dishes so one is almost immediately hit by the impact from these little morsels of red firecrackers bursting in one’s mouth. Acridity and astringency introduced take form through the use of Thai green limes and/or tamarind pulp and together, they produce a wave of refreshing sensation against the heat, helping to subdue the latter slightly. Some say that it is really a competition of these two flavours but I choose to think that the amalgamation makes it multi-dimensional. Speaking of multi-dimensional, Thai cuisine is also heavy on the use of fish sauce, much loved for its savory hues and profound sense of umami flavours it transpires. In fact fish sauce, despite being commonly employed in Indochinese cuisines like Vietnamese, Laotian and Cambodian food as well, is synonymously linked with Thai food. And everything is balanced with a bit of sweetness from Thai palm sugar, a milder, and incidentally paler version compared to its southern cousin coconut sugar (gula melaka/gula jawa) used extensively in Straits and Indonesian cuisine. As such, Thai cuisine is really a big melting pot of flavours as well as aromatics. For me, one dish which epitomises the very essence of Thai cuisine has to be ส้มตำ Som Tam, its ever popular Green Papaya Salad.

Asam Pedas Ikan Pari Johor – Sour and Spicy Stingray

We cook asam fish all the time at home. In fact, whenever the belimbing trees are laden with fruits, those few days are asam fish days. For us at home, Ikan Gerang Asam is the default way of cooking asam fish. But of course there are geographical variations to how asam fish is cooked.  Ikan Gerang Asam, the Melakan peranakan of preparation depends heavily on the use of daun limau purut (kaffir lime leaves) amidst other fresh ingredients like lengkwas (galangal ginger) to work up the aromatics! And that most certainly helped to work up an appetite! When I was preparing Laksa Belut Perlis, the famous eel laksa from the most northern Malaysian state in the Peninsula, all the rempah (blended ingredients) were basically boiled together with the broth base without any sautéing. But yet, it was still very delicious. And this month’s MFF brings me down all the way to the far south, to the bordering state of Johor for Ikan Pari Asam Pedas.

Ayam Buah Keluak – A Revisit…

Ayam Buak Keluak… such a love-and-hate relationship with this classic Peranakan dish. As much as I love eating it, I loathe making it. The preparation work that precedes is so much more laborious than the actual cooking of the dish itself! So so much more laborious! Work starts days ahead with the soaking and daily scrubs of the black nuts imported from Indonesia. While most recipes call for prep work three days in advance, I make it a point to soak for a minimum of five days, sometimes up to seven! And to make things “worse”, I do water changes and scrub not once but twice, literally day and night, making sure that they are good to use and safe for consumption. Not taking any chances here. Perhaps it has come to a point of being obsessive. What to do?! Most Peranakan restaurants charge them by the nut nowadays, how else can one enjoy the unique flavours of this dish without having to empty my pockets. Yet to enjoy this dish periodically is a dire need and not a mere want! Now you know why I love it to bits but hate it to the core at the same time!

On the Trail of the Phoenix – Ayam Buah Keluak

Ask any food lover for the Peranakan cuisine and they would surely babble ceaselessly and incessantly about their “favorites”! From simple kerabus like Sambal Belimbing Timun Nanas to the more elaborated Sambal Jantung Pisang, from the delicately flavoured Bakwan Kepiting, to the robust and full-bodied Buah Paya Masak Titek, from the popular Babi Pongteh, to the elusive Babi Tohay, from the healthy Nyonya Chap Chye to the not-for-the-faint-hearted Hati Babi Bungkus… the list just runs on and on, and I’m sure the rattling would too! And this doesn’t not even include an equally, if not even more comprehensive list of sweet and savory desserts, snacks and nyonya kuehs! Clearly one could not settle with just one, and I’m pretty sure he would not bear to, but instead, produce a collective “menu” , often macam panjang panjang, of dishes close to one’s heart. Sounds like much of an oxymoron I know, but that’s just one of the many dilemmas of a Nyonya foodie!

Ask again, for one single signature nyonya dish, and the options often narrow down to an invariable small range of dishes. And the name that would pop up most frequently has to be Ayam Buah Keluak!

On the Trail of the Phoenix – Ikan Gerang Asam

Ikan Gerang Asam is one of my favorite Peranakan dishes. It is also amongst the first nyonya dishes that I’d learnt to cook and experimented with. The intermingling of tang and heat often calls for additional servings of rice just to finish up any remnants of kuah (gravy) and assortment of stewed vegetables that went with it, even when the fish was long gone. Often times, more kuah than what the dish required would be prepared, so as to add more fish or other seafood, as well as vegetables and fruit for second helpings the next day. As with most stew or curry-based dishes, the flavours develop over time making it more sedap nia!!!
