When it comes to French pastry, Pierre Herme is almost like a household name. I’d mentioned him countless times on this blog and I’m sure some of you guys would already know that I am quite a fan of his works, especially the art of macaron making, which he revolutionised with innovative combinations of flavours and the use of exotic ingredients some totally unheard of, sometimes to the point of the unimaginable under his “Signature“, “Fetish” and in more recent years, his “Jardin” series. But during our most recent trip to Tokyo, we’d decided to go back to the traditions and “re-discover” the French classics. Read on to see how Pierre Herme fares!

An Evening with Chef Daniel Boulud @ db Bistro & Oyster Bar

db Bistro & Oyster Bar located in the Celebrity Chefs’ wing of Marina Bay Sands Singapore relaunched a couple of months back after its refurbishment to incorporate a seafood and oyster bar, as well as a new menu! During a recent dinner, not only did I get to sample some of the finest dishes from this French-American casual dining restaurant has to offer, it was also a tremendous privilege of having the opportunity to meet up with Chef Daniel Boulud himself, the celebrity French chef who has been immensely successful with his restaurants in the US, Canada and London, most notably the Michelin-starred ‘Daniel’ in New York.

Henri Charpentier @ Dempsey Hill – A Preview

It has been several months since the news of the renowned Japanese patisserie Henri Charpentier (HC) has finally set up a dessert salon here in Singapore, making it their first overseas outlet outside Japan. Truth be told, that came as a surprise for me as most others would have made their presence in other Asia-Pacific regions, like Hong Kong or Taipei where the pastry scene is somewhat more vibrant than us here. Perhaps the pastry and dessert markets in these places are somewhat saturated already, making it more competitive to venture into. Perhaps HC saw the potential in establishing a joint or two here in this relatively untouched land. Whichever the case, a new player in the market is always welcomed. Hopefully the coming of HC signifies the escalation of our local pastry scene onto the next level. But that remains to be seen.

Passion by Gerard Dubois @ Hong Kong

Our recent trips to Hong Kong have been more exciting than ever! The local pastry scene has picked up considerably over the last couple of years and it has never been short of new joints to try or places which we’d enjoyed to revisit. Passion by Gerard Dubois is one of the latest addition to the growing number of new places to go for fine pastry in Hong Kong. Being a patisserie, boulangerie and confiserie all at once, it opened in 2012 in Wanchai, the heart of the CBD district in Hong Kong. So for our latest trip in 2013, it only seemed right to pay them a visit.

最近又有一家甜點店新開張哦,但它沒有名字,所以就叫做“沒有名字的甜點店”。

品悅糖 Pâtisserie La Douceur @ Taipei … a revisit

Yes we are back here again! We’d visited them back in 2011 and were quite impressed with their creations then. Hence, we’d decided to come back again on our next trip to Taipei. Found out through a fellow blogger Chelle that their selection changes periodically. Well, we kinda figured that out as what she sampled looked entirely different from what we’d tried!

Pâtisserie & Salon de Thé Coichi, Osaka

Our last day in Kansai and we were not about to waste it. Chanced upon a new book (then) on cafes and patisseries in Osaka just the night before at a local bookstore in Shinsaibashi. Perfect! We had a quick browse and shortlisted two seemingly promising places to visit on our last day. First off in the morning was to Pâtisserie & Salon de Thé Coichi  located near Tamatsukuri Station 玉造駅 which is just a couple of stops away from where we stayed. They open really early for a patisserie, starting the day at 8 am instead of the usual 10 or 11 am, but we don’t mind at all! Just in time for some pastry breakfast! Or so we thought!

Tokyo 2013 : A Pilgrimage of Ramen, Patisseries & Depachikas! — A Sneak Preview

Hello everyone! Kindly excuse us for the long absence! Just realised that it had been 3 weeks since we last posted, only because we had been terribly busy trying to clear our work and run errands before we take a much deserved awaited break to Tokyo! The trip was planned to take place ahead of the hanami season as it was the only time when both of us could make it! Alas thanks literally to the freak weather, the cherry blossoms bloomed much earlier in Japan this year, allowing us to enjoy their beauty, amidst other spectacular floral displays along the way. The downside is, we had to cut back on several pastry joints which we had slated to visit. Nonetheless we had a really good time in Tokyo!

This trip to Tokyo is all about pastries, ramen and depachikas! We absolutely love depachikas in Japan, so they are surely a “must go” whenever we are in Japan! J lamented that we didn’t get to try any ramen joints during our last trip so I made sure that we had enough ramen this time round for J to remember by! And 5 years ago during our first trip to Tokyo, which incidentally marks the commencement of this blog, I wasn’t much into fine pastry making then. But I do remember being much in awe with what I saw at the display windows of dessert boutiques and patisserie sales counters at depachikas. The level of artistry and presentation in trhe Japanese patisseries then was already quite impeccable and very impressive. Over the years as I grew to appreciate and get involved myself in the French art of pastry making, the desire to return to Tokyo fueled on. So after a long wait of more than 4 years, we are finally back! I will be writing and sharing about the various patisseries and ramen joints we’d visited this time round over the next couple of months or so but here’s a sneak preview of what we’d tried and sampled in Tokyo 2013!

Salon de Thé de Joël Robuchon @ Taipei

Joël Robuchon is a name within the culinary scene which does not require much introduction. His line of restaurants, many of which of michelin-starred calibre is often regarded as the epitome of French haute cuisine. It it seems almost befitting to find him anchored in Bellavita,  a shopping arcade right in the heart of the Xin Yi District, the prime shopping belt in Taipei. Despite having only 6 floors and obviously dwarfed by the neighbouring Taipei 101, Bellavita stood out prominently amidst the surrounding skyscrapers with its Edwardian architectural style. Dotted with exquisitely designed cafes and fine dining restaurants, its a common sight to find madame moseilles aka “tai tais” all dolled up in haute couture  enjoying afternoon tea amidst alikened company.  No wonder this place is known as 貴婦百貨 in Taiwanese. And indeed JR has found himself two establishments in Bellavita – Salon de Thé de Joël Robuchon and L’Atelier de Joël Robuchon. Donned in only bermudas and polos, we are obviously too shabbily dressed for the main restaurant. So it was to the tea salon to pick up some of their pastry creations.

Green Pumpkin Japanese Bakery Part 1- Mont Blanc

Serangoon Central was my “turf”, having lived in that neighbourhood for a good 14 years, spending the latter years of my childhood and early adolescent years there. Though we’d moved away for more than 10 years now, I still find myself frequenting the place, especially since I work near the vicinity. Shopping at NTUC Xtra and Cold Storage for groceries, browsing new cookbooks in the public library on the rooftop became much of a tea-time ritual before setting off to the evening appointments. Even so, I rarely dine there, save for some occasional visits to some delis in the basement or grabbing a sandwich at Subway when my tummy starts to rumble. This is because I’m usually there alone, lazing the afternoons away, or sneaking some time to grab some fresh produce when I’m in between appointments. That’s why despite walking pass Green Pumpkin Japanese Bakery umpteen times over the countless visits, I’d not opt for any takeaways from their cake fridge, as I’d feared that the delicate mousse or cream layers simply wouldn’t be able to make the trip home as I almost never go back directly, having to spend another couple of hours before heading home.

Hence, when the day came when I actually had the evening free, I didn’t have to think twice about grabbing a cake from the Green Pumpkin Japanese Bakery home for some photos and a quick sampling. In fact, I did better than that! I grabbed four…

Pâtisserie Factory Shin @ Daimaru Umeda, Osaka. Another “home-grown” name trying very hard to make a name for itself in the patisserie circle in Japan, and had been somewhat successful, having almost 40 dessert boutiques and takeaway counters all over Japan, including Daimaru Umeda which we’d visited.  And they had one of my all-time favorites, Mont Blanc in not just one, but two flavours!
